Two award-winning chefs Tim Flores and Genie Kwon plan to open a Filipino restaurant and pastry counter at the former Winchester spot (corner of Winchester and Augusta) in East Ukranian Village, as they told the neighborhood during the East Village Association meeting at Homestaed on the Roof, 1924 W. Chicago Ave.

Genie, a pastry chef and Tim, a savory chef, worked at the two-Michelin starred Oriole in the West Loop and now plans to open the former Winchester spot at a new theme and concept.

During the meeting, the partners told the neighborhood that they are now processing the acquisition of the building and hopes to open by spring or early summer.

“We’ve always admired that building. We’re excited to be part of the community,” Kwon said.

Kwon and Flores currently live in Humboldt Park at the corner of Augusta and California. Kwon also added that replacing Winchester with a new business is their first venture on their own as a couple.

“I’m opening a restaurant [in this neighborhood], with her recipes, making food I grew up eating,” Flores said.

Flores’ menu will, of course, focus on Filipino recipes while Kwon’s pastry selection will be of French American variety with “some traditional recipes.”

The complete set of offerings is still in the work but the restaurant will serve breakfast, lunch, and dinner every Tuesday-Sunday.

Kwon highlighted that they gonna hire 18-20 employees and should you wish to be part of it, you may contact
